• 1 cup skim milk
  • 1 egg (or 1/4 cup egg beaters)
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/3 unsweetened cocoa powder
  • 1/4 cup Splenda granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Today, I went over to the dark side…of pancake making that is!

I’m a big Star Wars fan. It brings back many nostalgic memories of my childhood. Specifically that we only had 8 TV channels, so my brother and I would frequently have Star Wars marathons. But aside from that, I really love the movies. They are timeless.

Last year for Christmas, the husband surprised me with a darling Star Wars apron and these cute pancake molds. If you use molds, make sure you douse them with cooking spray so they don’t stick.

These pancakes are rich and fluffy. Add a sprinkling of powdered sugar and they taste like brownies! Brownies for breakfast and they’re healthy, too. Pinch me.

Directions:

  1. In a small bowl, combine milk and egg; whisk until blended.
  2. In another bowl, combine flour, cocoa powder, sugar, baking soda and salt; mix well.
  3. Add milk mixture; whisk just until dry ingredients are moistened.
  4. Heat griddle over medium heat until hot.
  5. Pour batter onto griddle (or into mold).
  6. Cook 1-2 minutes or until batter is set around edges.
  7. Carefully turn over pancake; cook 1-2 minutes or until pancakes are cooked through.
  8. Repeat with remaining batter.
  9. Sprinkle pancakes with powdered sugar; serve warm with sugar free syrup.
